I finally stopped trusting the clock on my walk-in

Last week our walk-in cooler temp showed 38 for three days straight. Turns out the probe was iced over and the real temp hit 52. I nearly lost 120 pounds of pork belly before I caught it. Now I check with a handheld thermometer every morning and I'm wondering how often you guys actually trust those digital readouts over a manual check.
