Hold on, I think you mixed up the numbers, @umasullivan. If you hit 2000 pounds just from one diner deal, that's a huge jump, not just a game changer. It's more like a whole new playbook. I had a similar thing happen when a local butcher ordered triple my normal stock for a weekend festival, and it threw off my whole schedule but paid for a new tub of ear wipes.
