My buddy from the Omaha stockyards argued that a 6-inch breaking knife is useless compared to a good 8-inch cimeter for primal breakdowns, and it's got me rethinking my whole kit.

He said 'you're just making extra work for yourself with that short blade' while we were breaking down a side of beef last Thursday, and I can't stop thinking about the wasted motion.

Used to think a six-inch was fine for everything. Watching him work with that cimeter changed my whole view, honestly. Felt like I was sawing while he was just gliding through.
