My messy breakdown of a side of beef yesterday showed me why rushing never pays off in this trade.
I finally got that taking an extra minute to follow the natural seams means less waste and way less cleanup time later.

But what if you have to rush to keep up with demand? Sometimes speed keeps the whole operation moving.

That rush mindset @nora_barnes is how my uncle's deli got in trouble. They started slicing too fast to handle the lunch crowd, messed up the thickness on a huge order of pastrami, and had a whole corporate client cancel their weekly order. Speed just cost them a steady customer.

Your line about rushing never paying off is so true. My friend hurried through a lamb leg and butchered the silverskin, ruining the whole cut. He lost money and learned to slow down the hard way.
