Spent 45 minutes sharpening a knife that was fine, turns out my steel was bad
Man, yesterday I was convinced my boning knife was dull as heck. I kept running it over my honing steel and it still felt rough on the pork shoulder. After 45 minutes of frustration, I grabbed my coworker's steel and one pass fixed it right up. Turns out my cheap steel had worn down and was actually micro-dinging my edge the whole time. Anyone else ever blame their blade when the tool you maintain it with is the real problem?
