$45 is actually a steal for a restaurant supply boning knife, most of those places have prices that are way lower than the fancy brands. Just make sure you're not using it on frozen stuff or bones that are too thick, those blades are usually thinner and can chip if you get too aggressive lol. A good steel or ceramic rod will keep it sharp for ages if you hit it before each use. Also curious what kind of handle it has, some of those supply store knives have weird ergonomics that wreck your hand after an hour of breaking down chickens.
