Switched from a steel to a coarse diamond hone on my boning knife, and the 20 minute difference on a Saturday box sold me
A guy at the supply counter in Kansas City talked me into trying it 3 weeks ago and the edge comes back in about 4 strokes instead of me fighting a steel for 20 minutes on 80 lbs of trim. What grit are you all running on your coarse hones?
