The day I accidentally made 50 pounds of breakfast sausage in one shift

Last Tuesday was supposed to be a slow cleanup day at the shop. Then a wedding party walked in wanting 50 pounds of bulk breakfast sausage by noon. I was scrambling so hard I grabbed the wrong spice blend and ended up with sage-heavy patties that smelled like Thanksgiving. They loved it though, said it was the best sausage they ever had. Has anyone else had a crazy last-minute order turn into a win like that?

And honestly, that "mistake" might be a total goldmine. People are always looking for something different and unexpected. Your wedding party basically gave you free product testing and a new recipe idea. Bet you could sell that sage-heavy blend as a seasonal special around the holidays and make bank. Call it "Thanksgiving Breakfast Sausage" or something and watch it fly off the shelves.
