TIL most home cooks are way too gentle with cheap steaks

I watched my neighbor pat a sirloin dry with a paper towel for 10 seconds last week and then wonder why it boiled instead of seared, you need to get that surface bone dry and then leave it alone in the pan for at least 4 minutes before even thinking about flipping, has anyone else seen people ruin decent meat by fussing with it too much?

My neighbor literally pokes at his steaks every 30 seconds with tongs like they're going to run away. Just leave it alone, nature does the work.

Wait, EVERY 30 SECONDS?! Like he's standing there with tongs just constantly squeezing the life out of his steaks? That's NOT normal, right? I mean seriously, I've seen people hover over their grills before but that's like a COMPULSION or something. Those poor steaks must be tougher than shoe leather by the time he's done. Nature does the work is right, you just gotta trust the heat and let it be. I'd be tempted to walk over and just take the tongs away from him, for the sake of the meat.
