Watched a guy break down a steer at the Iowa State Fair demo

Saw this old timer work a whole side of beef in under 20 minutes. No power tools just a knife and steel. How do you get that kind of speed without losing the yield?

@lily511 that's basically the opposite of how I carve a turkey. I just close my eyes and hope for the best, usually end up with something that looks like it lost a fight.
