Watched a guy debone a whole hog in 8 minutes at the Iowa State Fair last summer

He hit every joint like it was nothing and I swear I blinked and missed half the cuts. Has anyone else picked up a trick from watching a demo that actually changed how you break down a shoulder?

...and that's exactly it man, it's like life in general you know? People try to muscle through everything with a straight line approach when the whole trick is just feeling out where things naturally want to go. I've seen it with guys trying to back a trailer up a driveway too, they fight the steering wheel hard instead of just letting the trailer guide their hands a little bit. Same with arguing online, folks come in swinging with their point instead of following the curve of the conversation to get somewhere cleaner. Really makes you think how many things we just force for no good reason when the right move is to slow down and read the lines that are already there.

Just watching how his knife tip followed the natural curve of the bones made me realize I'd been forcing my blade straight down instead of letting the meat guide it. Tried that on a pork shoulder last weekend and got way cleaner cuts off the blade bone with way less waste. Your mileage may vary but for me that tip about following the bone's shape instead of fighting it was a game changer.
