Saw a custom oak bar top at a tavern in Nashville that made me rethink my edge profiles

Stopped for a burger at this place off Broadway last week and their bartop had this hand routed bevel that caught every bit of light, looked like it was carved not machined. The owner said a local guy did it with a router sled and a ton of sanding, no CNC at all. Has anyone else tried building a bar top with a deep bevel like that and how do you keep the finish from chipping at the edge?
