Why I think plywood cabinet boxes are overrated
I started building all my boxes with solid pine instead of plywood. The extra weight is worth it for the strength and custom look it gives. Do you all stick with plywood or have you switched too?

Pine can hold up just fine in a lot of places. Kevin's point about plywood in a wet kitchen makes sense, but low humidity is the real key. Your Colorado cabin is a perfect example of where solid wood works without issues. It's more about matching the material to the actual conditions of the space.
