A kitchen fire in a Nashville hotel taught me to keep a box of salt by the stove

I was working a busy brunch shift about two years ago when a pan of bacon grease caught fire. The new guy panicked and grabbed a nearby spray bottle, which just spread the flames. My head chef, without even looking up from his station, yelled 'Salt, you idiot!' and threw a full box of kosher salt at the base of the fire, putting it out in seconds. Since that day, I keep a dedicated, open-top container of salt right next to every station's burners. It's faster and safer than reaching for a lid or a fire extinguisher for small grease fires. Has anyone else had a close call that changed a small part of your kitchen setup?
