Remember when a line cook could afford a place near the restaurant? I knew a guy, @skylergrant, who worked the grill at a good spot downtown maybe fifteen years back. He rented a whole apartment above a bookstore on his wages, no roommates. That whole idea feels like a story from another time now.

Wasn't there a study about food truck prices basically matching sit-down restaurants now? It kind of defeats the whole point of quick, cheap eats. The whole scene just feels like it's for people with too much money.
