Had to pick between a $2000 combi oven and a new walk-in cooler compressor last month.

The old compressor was on its last legs, but the owner wanted the new toy for the line. I pushed hard for the cooler, arguing we'd lose thousands in product if it died on a Friday. We got the compressor fixed, and sure enough, the old oven held on. Anyone else had to fight for the boring but critical repair over the shiny new gear?

Honestly, I'd have gone for the oven. A major equipment upgrade can really change your output.

Saw a whole thing about this in a trade magazine last month. They said a new oven only helps if your current one is the main thing holding you back. Sometimes the bottleneck is actually your mixer or even your cooling space. You gotta figure out which piece of equipment is slowing you down the most before you drop serious cash. Otherwise you just have a fancy new oven waiting on the same old slow stuff.
