Just dropped $400 on a new immersion blender and it's a total game changer for sauces
I was making a big batch of tomato bisque last Thursday and my old stick blender died halfway through. I ran out and bought a high power one from a kitchen supply store. The motor is so strong it purees roasted veggies in seconds with no lumps at all. My soups and emulsions are way smoother now. Has anyone else found a specific tool that really upped their sauce game?

What kind of things are you making with it? I had the same thing happen with my old blender... it just gave up on a big pot of butternut squash soup. I switched to a heavy duty model last year and the difference is crazy... it turns nuts into butter and makes silky smooth hollandaise without splitting.
