Just switched from a standard mandoline to a Japanese Benriner for my prep

The difference in how thin I could get the radishes for a salad was crazy, like paper. It saved me about 15 minutes on a 50-cover lunch service. Anyone have a better brand for super thin veg work?

Wait, the Benriner is Japanese though? I thought they were the go-to for that paper thin cut. What model did you get that felt like a step down?

Which model? The cheap plastic one. It feels flimsy and the blade guard is awful. My old one was solid metal and just glided through anything. This new version is a total letdown for the price.
