My main oven gave up halfway through a 60-cover wedding party last Saturday.

The temperature just dropped and wouldn't come back up, right in the middle of service. We had to finish everything in the combi oven and on the stove tops, which was a total scramble. Has anyone else had a major piece of kit fail during a big event? I need a reliable backup plan.

Our combi oven basically became the guest of honor at a 200-person banquet once. The main oven's control board fried right as the first sheet pans went in. I've had a backup rental company on speed dial ever since.

Oh @jason_fisher4, keeping a rental on speed dial is just smart insurance for those control board surprises.

We keep a spare Alto-Shaam warming cabinet in storage after our convection oven died mid-wedding service. It saved a 150-plate dinner last fall.
