My old mentor told me to always season cast iron after every use and I did for 10 years before finding out that's actually overkill for most pans
He swore by it from working at a steakhouse in Chicago but after I started talking to other cooks online they said I was basically stripping the seasoning every time with dish soap, so who's right here, the old school guy or the new school crowd?

Does scrubbing once in a while actually ruin the pan though?

@eric_wright77 my buddy Tom scrubbed his cast iron once with soap and a scrubby sponge (the green kind, you know the ones) and it took him like three rounds of seasoning to get it back to non-stick. The pan looked fine after one scrub but eggs stuck like crazy for weeks after that. He still scrubs it if something really stuck on there, but he uses a chainmail scrubber now and it works way better without wrecking the seasoning.
