I was plating the main course at the Grandview Hotel last Saturday when my new hire dumped an entire 4-ounce ramekin of Maldon salt into the scallop mousse, so I had to pivot and turn the whole batch into a cured garnish for the beef dish instead. What's the most ridiculous kitchen save you've ever had to pull off?

...and that's when I knew the "pinch" was a cry for help, not a measurement. My most ridiculous save was when a prep cook confused powdered sugar with flour in a batch of bechamel for a 50-person brunch. I stood there, tasted it, and realized I could either dump 30 quarts of failed sauce or rebrand it as a "sweet cream gravy" for the biscuits. I threw in some vanilla, called it a Southern fusion thing, and the guests asked for the recipe. Sometimes you just have to lie with confidence and a little bit of sugar.

Reminds me of the time I saved a salty cake by calling it a "salted caramel experiment.
