That 3-day catering gig where the walk-in died on day one
We had 200 covers booked for a wedding weekend in Austin and the walk-in cooler gave out Friday morning, so I spent 46 hours running cold stuff in coolers packed with dry ice while my sous called every repair place in Travis County. The repair guy finally showed Sunday at 6am and fixed a $40 relay, which made me wonder how many other disasters are just one tiny part away from being fine. Anyone else had a near-miss like that where the fix was embarrassingly small?

Three years ago I would've told you a dead walk-in meant you were screwed for days, but now I get it after my own $25 thermocouple swap saved a 400-person seafood boil. I used to think big problems meant big fixes, like replacing the whole unit or calling in a pro for a full overhaul. Then I watched a buddy diagnose a bakery's entire cooling failure as a loose wire that took 10 minutes to tighten. So yeah, I've flipped completely, now I always check the stupid small stuff first before panicking.
