The first ticket I ever wrote vs the one yesterday, night and day difference
I've been on the line at Rocco's in Portland for almost 4 years now, and I pulled up an old ticket from my first month the other day. It was a mess, I had like 8 tickets hanging and I was trying to do everything at once, cutting corners on plating and mixing up the order of fire on a busy Friday. Yesterday I ran the same exact station with 14 tickets up and I was calling out times, working one protein at a time, and had every dish out within 2 minutes of the target. The shift lead even said 'whoa, you're actually calm now' which felt weird but good. What changed? I stopped trying to multitask everything and started treating each ticket like a tiny project with a start and finish. I also started writing my own prep list at 3pm instead of just reading the board. Has anyone else had that moment where you look back at your old tickets and just cringe at how chaotic your timing was?
