The trick about kosher salt ratios finally clicked for me last night
I was reading a old Cook's Illustrated article from 2019 about salt measurements and realized that 1 tablespoon of Diamond Crystal kosher salt weighs about half of what Morton's does. All this time I was following recipes that called for a tablespoon of kosher salt using Morton's and wondering why my food was way too salty. Has anyone else had this issue swapping salt brands in recipes?

Oh man, that Cook's Illustrated article is basically the reason I stopped blindly trusting any recipe that says "1 tablespoon salt" without specifying the brand. I did the exact same thing with Morton's and ended up ruining a perfectly good batch of chili because it tasted like I dumped the whole ocean in there. It's like the baking soda vs baking powder confusion all over again but for savory cooking.
