Update: dropped $280 on a used 24 quart tilt skillet and it's now a very heavy paperweight
Bought it off a restaurant closure auction in Cleveland thinking I'd do big batch braises, but the thermostat is shot and replacement parts are discontinued. The auction listing said "tested and working" which apparently meant it powered on and nothing else. Anyone know a hack to rig an external temp control on these things or should I just eat the loss?
