Wait, was she just being rude or did she have some weird rule about it? Did she say why exactly or just give you a dirty look and walk off? There has to be a story behind that kind of thing - most waitresses don't care what you do with your coffee as long as you're not making a mess or being loud. What kind of diner was it, like a chain place or a local spot? Sounds like she was having a bad day or maybe the owner has some strange pet peeve about coffee swirling.
