Hot take: the bloom time on a pour over is not a rule, and chasing it messed up my cups for a month
In my experience people in coffee videos act like your bloom has to run exactly 30 to 45 seconds or the cup is ruined. I followed that for about a month with a bag of Ethiopian beans from a shop in Minneapolis and kept getting flat, sour notes. When I finally just let the bed settle until the bubbling stopped (somewhere around 50 seconds for that batch) the sweetness came through way more. Your mileage may vary by roast and grind, but I think the clock gets more attention than the actual look of the bed. Has anyone else found their bloom runs longer or shorter than the standard advice?
