I finally dropped my espresso scale and stopped weighing every shot
Used to weigh everything to the 0.1 gram for three years straight, even bought a $120 Acaia scale. Then last month my buddy from Portland just eyeballed my shot and said it tasted better than my 'dialed in' one. Now I grind by feel and timing, maybe check the scale once a week. Anyone else ditch the measuring tools and go back to trusting your hands?

Ditched my thermometer for milk steaming last year after burning my hand one too many times, and somehow my lattes got better. My theory is my hands finally learned what my eyes kept second-guessing. It takes a while to trust the feel, but once you do, it's kind of liberating, even if I still fumble the grinder every other morning.
