Just realized my $50 'coffee bean aging kit' is basically a fancy cardboard box

Bought it online thinking it would improve flavor, but after 3 months my beans just tasted stale and flat. Anyone know a REAL way to age beans at home, or is this whole idea just marketing?

Actually, temperature swings aren't the whole story with those kits. The real issue is often that the beans aren't getting enough airflow inside a closed closet. Stale air builds up and you end up with mold issues before any chocolatey depth shows up.

Nah, you're doing it wrong. That kit needs the right environment. Stable temperature, controlled humidity. My buddy uses a ceramic crock in his basement. Got this amazing chocolatey depth after five months. It's like aging cheese or wine, not just tossing beans in a box. Your setup probably had wild temp swings. Kills the process.
