Overheard a dude at Starbucks say pour-over is just drip coffee with extra steps
Was waiting for my order at a shop in Portland last week and this guy in a flannel was telling his friend that pour-over methods are basically just fancy drip coffee that takes 5 minutes longer. I had to bite my tongue because he's not entirely wrong, but the control you get over the bloom and pour rate changes the flavor way more than an auto drip at 200 degrees. Got me thinking about how many people dismiss manual brewing without actually trying it with a proper gooseneck kettle. Any of you run into this take before and how do you respond without sounding like a snob?

Yeah I feel you on that "bite your tongue" part. I actually had almost the same thing happen at a coffee shop in Austin. This guy was telling his friend that pourovers are just drip coffee for hipsters. I just told him straight up that I used to think the same thing until I tried it with a cheap gooseneck kettle I found at a thrift store. The difference was night and day for me because I could actually control the water flow and let the coffee bloom properly. My auto drip always gave me this bitter taste no matter what beans I used. So I just showed him a quick video on my phone of how the pour over lets the coffee breathe and he actually seemed interested.
