Stopped into an old diner in Cleveland last week
They still use a 30 year old Bunn brewer and the coffee tastes better than any fancy shop I've been to. Makes me wonder if all this gear really matters or if we just like the look of it.

That Bunn brewer is basically bulletproof (my parents have one from the 80s that still works) and the trick with those old commercial machines is they hold temp better than almost anything new. Diner coffee usually tastes good because they're brewing it strong and fresh throughout the day, not because of fancy gear. Most of the expensive home setups are just eye candy when you get right down to it.

Eric, you just made me remember my uncle's old Bunn from a diner that closed in '92 (still tasted great last time I visited).
