That 2 AM coffee cart at the county fair is lying to you

Honestly, I sat through a cupping at a shop off of Colfax Avenue in Denver last Saturday and watched a guy panic because his V60 didn't "bloom" enough. Ngl, the gas release from fresh beans is real, but if you're using beans roasted maybe 4 days ago, that aggressive 45 second pre-wet is doing nothing but stalling your brew. I've pulled 200+ pour overs on my home setup and the difference between an actual bloom and just wetting coffee is the steady rise, not the fizz. Has anyone else seen baristas freak out over a flat bed and blame the bloom when their grind is just too fine?
