The 2-minute bloom timer that fixed my pour overs
I kept getting bitter cups no matter what beans I used, so I tried timing the bloom with my phone instead of guessing. Setting a strict 45-second wait for the first pour, then another 90 seconds before the second, totally changed the flavor profile at my local shop's tasting in Portland. Now I use a cheap kitchen timer from Target, cost like 8 bucks, and my morning coffee tastes way smoother. Anyone else have a ritual they swear by for the bloom phase?

Honestly, that's wild because I was doing the exact same thing wrong for months. I finally broke down and started weighing the water for my bloom instead of eyeballing it, and that made a bigger difference than the timer for me. For my pour over, I do 60 grams of water, stir it once with a spoon, and wait exactly 30 seconds. If I rush that step, the coffee comes out sour no matter what, but 30 seconds is my sweet spot with the beans I get locally.
