The 4 AM pour over at station 7 finally clicked for me

Last month after a rough 3 AM call I stood there timing my bloom for the fourth try and realized the whole ritual is about control when everything else is chaos. Anyone else find their brew method changes depending on the shift or the call load?

Does the pour over ever actually taste better at 4 AM, or is it just the only thing that makes sense when your brain is fried? I've noticed my whole routine shifts with the call load, like on busy nights I'll skip the scale and just eyeball the grounds, which feels wrong but tastes fine. But on slow, dead quiet shifts I'll bust out the gooseneck and do the whole slow spiral thing, even if it takes ten minutes. It's not about the coffee being better, it's about having one small thing that goes exactly as planned. That control thing you mentioned is real, the ritual gives you a win before the next page comes in. I think we're all just trying to find one predictable moment in a job that's anything but.
