What is the deal with some concrete mixes setting up like a rock in 15 minutes?

Honestly I gotta disagree a bit here. Most concrete has a pretty standard set time and if it's kicking off in 15 minutes something is off with the mix or the weather. Fast set stuff is made for a specific purpose, not a defect. You sure it wasn't a quikrete rapid set or something?

Oh man, that's wild! @lindaw29 probably has a point about the rapid set stuff, but I had a bag of regular mix once that turned into a rock before I even finished stirring it. My neighbor said it was because I left it in the sun too long, and I just nodded like I knew what he meant.
