I hung a 40-foot banner for a dealership Tuesday, came back Wednesday morning to print peeling at the seams because the temp dropped 25 degrees, and now I'm wondering how you all handle outdoor vinyl when weather swings like that?

That part about the temp dropping 25 degrees overnight got me. Sounds like you didnt plan for the weather before you hung it, not that the vinyl just gave up. Vinyl shrinks and expands, everyone knows that. If you mount it tight on a warm day and it gets cold, it's gonna pull at the seams. That's not the material failing, that's physics doing its thing. Next time leave a little slack or use more overlap on the seams, and check the forecast before you staple anything up. Blaming the temp drop is like blaming rain for getting you wet.
