That little diner off Route 9 has the worst pancakes I've ever eaten

I stopped at Hank's Diner in upstate New York last Wednesday because everyone raves about their breakfast. Got the buttermilk pancakes with maple syrup. They were basically wet dough on the inside with a burnt crust on the outside. Took three bites and pushed the plate away. People in the reviews call them 'fluffy and golden' but I think they are just used to mediocre food. Has anyone else eaten at a hyped spot and felt like you went to a completely different restaurant?

Had the exact same thing happen at a place called Sunny's Griddle in Ohio. Went there because everyone in the subreddit for that area swore their pancakes were "life changing." Got a short stack and it came out looking perfect, all golden and tall. First bite was a nightmare, raw batter in the middle, rock hard outside. I think the secret is they cook them too hot and fast so they look done but aren't. What saved me was asking the waitress if they could remake them on low heat with a lid on. She looked annoyed but the second batch actually came out fluffy and cooked through. Sometimes you just gotta speak up or accept that some spots are all hype, no skill.
