Structured vs. free-form draping: which do you lean on more?

I started a new dress design by draping directly on the mannequin, but then I switched to drafting a flat pattern from scratch because my darts kept shifting. The free-form approach gave me a softer silhouette, while the structured method made the waistline way cleaner. Which approach do you trust when you're trying to lock in a specific fit?

Mood is overrated, I stick with one method for each fabric type and it works fine.
