Just realized my sauerkraut jar was bubbling for a totally wrong reason
I was reading a book from the library about old food preservation and it said a sealed jar can build up over 30 psi from fermentation gas... which is way more than I thought. My jar was hissing a bit yesterday and I just figured it was normal, but now I'm a bit worried I've been doing this wrong. How much pressure is actually safe before you need to burp a jar?

Over 30 psi" is way more than I thought was possible too.

My tire gauge only goes to 32, so I'm safe.
