My uncle told me to stop stirring my kimchi and just leave it alone

He said, 'Just pack it tight and walk away for three days.' I was checking it twice a day before, poking it around. This batch I left completely alone in the pantry. Came out way better, more sour and crisp. Anyone else get told to just ignore their ferment?
