TIL my packed kraut jar blew its top from no air gap

The lid shot off and covered my kitchen in salty juice. Maybe it's just me but you really need that inch of space at the top.

Seriously? That sounds messy but is it really a critical step? Plenty of people fill jars nearly full without a giant mess. How old was your batch anyway?

Last summer in Ohio, I canned peaches without headspace. All jars sealed perfectly. No explosions or mess. So I question how critical it really is. Many home canners ignore this rule. Their results are just fine.
