Just realized everyone at the shop is skipping the grain filler step on oak

Sanded three pieces back down after a year because the finish looked muddy, and the open pores were the whole problem. Anyone else see this happen with water-based topcoats?

My uncle's oak table did the exact same thing. It looked cloudy and cheap after a year. I see this everywhere now, like people skipping primer on drywall or not cleaning a surface before they paint. It's always the skipped prep step that ruins the job later. That extra hour of work saves you from doing the whole thing over.
