PSA: the line cook at my brother's BBQ said to dry wings on a rack in the fridge overnight, and it fixed my air fryer wings
I was at my brother's place in Akron last month and his buddy who works the grill line saw me patting raw wings with paper towels and told me to stop. He said paper towels only get the outside, and the real move is a wire rack in the fridge overnight so the skin dries all the way through. I tried it with 2 pounds of wings the next night, 12 hours uncovered, and they came out with actual crackly skin in 22 minutes at 400 instead of the rubbery ones I used to get. No cornstarch, no baking powder, nothing else changed. Now I'm wondering what else I've been overworking. Does anyone here do the overnight dry for thighs too, or is it just a wing thing?
