Shoutout to my air fryer for finally making decent chicken wings
I've been trying to get crispy wings in my air fryer for like 6 months now and they always came out kinda dry or rubbery. Last weekend I finally figured out the trick - patting them super dry with paper towels and tossing them in a little baking powder before cooking. I did a batch at 380 for 25 minutes, flipping halfway, and they came out with actual crunchy skin for the first time. My roommate even said they looked like takeout wings which felt like a huge win. I think the key was not overcrowding the basket too, I only did 8 wings at a time. Anyone else have a go-to method for wings that actually works?

Honestly, your trick about patting them dry and baking powder is spot on. That baking powder thing is a game changer for real. My buddy tried that exact method last summer for a BBQ and he said they came out so crunchy he almost burned his mouth on the first bite. He did the same thing with the 380 and flipping, and he told me he finally felt like he could actually compete with the wing place down the street. It sounds like you finally cracked the code, and that's a huge win.

Wait, wait, wait. He said he almost burned his mouth on the first bite? That's a level of crunch I didn't even know was possible with homemade wings, that's wild. I need to get on this baking powder train immediately because I've been chasing that exact kind of heat for years.
