TIL frozen fries cook better if you soak them first

I used to just dump frozen fries straight in the basket and call it done. Then my sister in law told me to soak them in cold water for 20 minutes before air frying, and I thought she was nuts. But I tried it last week with a bag of crinkle cuts from Aldi, and the texture was totally different. They came out crispy on the outside and fluffy inside, not that weird dry chalky thing frozen fries do. She said it takes off the ice crystals and extra starch, which I guess slows down the cooking so the middle gets done. I still don't fully get the science, but I'm never skipping the soak again. Anyone else do this or have a different trick for frozen fries?
