TIL my air fryer wings went from soggy to perfect after I started drying them for 20 minutes
I made wings in my air fryer every Sunday for about 4 months and they always came out with wet, rubbery skin. Last week my neighbor Dave came over while I was prepping and asked why I was putting them in wet. I had no idea that was even a thing to worry about. He told me to pat them down and leave them on a plate in the fridge for 20 minutes before cooking. I tried it the next day at 380F for 22 minutes and the skin was actually crispy for the first time ever. Now I want to know what else I have been doing wrong this whole time. Does anyone else dry their wings first, and does it make that big of a difference for you?
