Accidentally made a sourdough starter from 3 year old flour, and it worked
I was cleaning out my pantry last week and found a bag of whole wheat flour that expired in 2021. Decided to try it anyway out of spite, and that starter is now kicking harder than my last three attempts combined. Has anyone else had weird luck with stale flour or did I just get lucky?
Old flour has way more wild yeast hanging around than fresh stuff. The stuff you buy at the store is often too clean, so the yeast has to come from the air and your hands. Letting a bag sit for three years is basically free aging. The oils go rancid but the microbes don't care. That rancid smell probably even kept mold out.
