Hot take: I used to hate using a kitchen scale for baking
Always thought cups were fine until I tried a recipe for macarons that flopped 3 times in a row. One weigh-out later and the fourth batch came out perfect, so I guess I'm a convert now - anyone else fight the scale for years?

Man that macaron thing is exactly what got me too. Tried making them three times with cups and each time they came out like sad little pancakes. Finally broke down and bought a ten dollar scale off Amazon and now I weigh everything for baking. The biggest shock was how much my flour scooping varied from batch to batch. Even simple stuff like chocolate chip cookies turned out way better once I started weighing instead of guessing.

Oh man @wesley_hart you're so right about the flour thing. I did the same thing with measuring cups for years and just thought I sucked at baking. The first time I weighed my flour I was honestly shocked at how wrong I'd been getting it every single time. It's like once you switch to a scale you can't go back because you realize how much guesswork was involved before. Even my basic banana bread recipe got way more consistent and actually rises properly now. I tell everyone who wants to bake that the scale is the real game changer not some fancy mixer or expensive ingredients.
