I finally looked at a picture of my first attempt at sourdough from 2018 next to the loaf I pulled out this morning.

The difference between that flat, dense brick and the open, airy crumb I get now, after maybe a hundred tries and switching to a digital scale for my flour, is honestly kind of wild.

Honestly, I kind of miss that first dense loaf sometimes. It was a total brick, but it made the best, most sturdy toast that could hold a ton of butter and jam without falling apart. My fancy airy loaves now can't handle that.
