I finally tried weighing my flour instead of scooping it
My cookies used to spread into one giant sheet, but after using a kitchen scale for the flour they came out perfect. The difference was about 50 grams less flour than my usual packed cup. Anyone else have a simple switch that fixed a baking disaster?

Switching to a scale was a game changer for my bread. My loaves used to be dense bricks, but weighing the water and flour fixed it. Turns out my "cup" of flour was a full ounce heavier than the recipe expected. Now I weigh everything, even the salt.

Ever wonder if weighing ingredients changes how you actually feel the dough? @barnes.morgan is totally right about the scale fixing density, but for me, it also made the process more about touch. I stopped watching the mixer and started just feeling when the dough was right. My hands learned what a proper hydration feels like, not just what the grams say. The scale gave me the confidence to stop using it so strictly after a while.
